Young Caciotta Fresco Cheese
Stracchino originates from the Lombardy region of Italy, and dates back to the tenth and eleventh century. The name “stracchino” was initially given to the cheese made from the “stracca” cows’ milk, which climbed down the alps in the autumn from the summer pastures. In a twist on the traditional, we make our stracchino with 100% Ontario sheep’s milk.
Stracchino is an unripened cheese with a soft, yet firm texture. It is mild, slightly salty, and delicate in nature. The whole sheep’s milk gives the stracchino a creamy flavor.
