Caciotta is a cheese that was created relatively recently to meet the needs of shepherds to create a more delicate product.
It is less spicy than Pecorino, and it can be ready in less time.
Caciotta can be fresh or semi-mature; its maturation is interrupted before the cheese becomes excessively mature.
Depending on the region in which it is made, Cciaotta can be produced from all types of milk, including sheep, cow, goat, water buffalo, or mixed milk.

Caciotta, from the Tuscan “Cacciola”, is a type of cheese produced in Italy
from the milk of cows, sheep, goats, or water buffalo.
Cacciotta has more than a dozen variations.
The cheeses are cylindrical in shape and up to 1 kilogram (2.2 lb) weight.
The ripening period is brief, and the soft, yellow rind surrounds a white
or yellowish body, which is soft and mild in flavour.
